Goodness Gracious Great Balls of Energy!!!

Recently, my husband and I went on a fifteen day juice fast. The first ten days we juiced twice a day and ate once. I know, not really fasting, but getting there! The following five days, we survived on juice! It was amazing! We ate (er...drank) veggies and fruits that we have probably never purchased in our lives...kale, beets, radishes, to name a few.

When we decided to start eating again, we wanted to be sure we were making healthier choices than we had in the past. A friend shared a recipe from The Marathon Mom Blog for Granola Energy Balls. I altered the recipe a bit for my family as we have one who doesn't like coconut. You can see the Marathon Mom's original recipe here. I posted my altered version below.

We absolutely love these little nuggets of delicious-ness! They are so tasty and super easy to make! Give it a shot and let me know what you think. Just be warned....they are addictive! They are also full of fiber....so watch out!

Ingredients:
2 cups oats
1 cup peanut butter
1 cup ground flax seed (simply grind them up in a magic bullet, food processor, or coffee bean grinder)
1/2 cup chocolate chips
2/3 cup honey
2 tbsp wheat germ
1 tbsp vanilla
1 teaspoon cinnamon

Directions
1.Mix all ingredients thoroughly.
2.Roll into balls.
3.Store in fridge in an air-tight container.
You can choose the size of your balls. I made mine a bit larger so I wouldn't feel guilty opening the fridge over and over and over again to sneak one out!! My recipe made 22 balls.
